Agronomic operations

The Guyot dry pruning is carried out starting from January, maintaining a number of 7-8 buds per vine. From May, with shoot thinning and suckering, superfluous shoots are removed, and the main ones are tied; these are fundamental operations to maintain a good vegetative and productive balance of the plant, especially in the case of young vineyards. In mid-August and early September, two grape thinning operations are carried out to distribute the vine's production better among the closest shoots to the vine and to prevent cluster congestion (the main cause of gray mold attack in humid years); cluster thinning, which promotes better grape ripening, allows for a higher concentration of sugar and phenolic substances, and better product health.
For over 20 years, we have practiced cover cropping in the vineyards to create a more balanced canopy-root ratio of the vine and to safeguard beneficial insects in the vineyard; for the same reason, low-impact pesticides are used, and the use of chemical herbicides is avoided.
Grape harvest is manual, in 18 kg crates.

Oenological operations

The winemaking process begins with crushing and destemming, followed by a period of cold pre-maceration before alcoholic fermentation. After approximately 12 days, during racking, the free-run wine is extracted, which will undergo malolactic fermentation in cement tanks and will remain for at least a year. After a light clarification and cold stabilization, it will be filtered and bottled.

Wine profile

Color: Intense and brilliant ruby red.
Aroma: Ethereal, typically herbaceous, with light fruity notes of blueberry complemented by spicy notes of black pepper.
Taste: Pleasantly soft wine, characterized by balanced freshness and good olfactory persistence given by sweet tannins. It's a wine of great longevity.

Food pairing:

Qualification: Young red wine, velvety, and of good structure.
Pairing: Recommended with roasted red meats, braised dishes, and game in sauce. Excellent pairing also with aged cheeses and cured meats.
Serving temperature: 16°C.

TANGO WINE made its debut at Vinitaly in 2014. It could be considered the younger sibling of APLOMB, as it is the same Cabernet but instead of being aged in barrels, it is bottled young.
TANGO WINE is the stage name of Laura Boatti, a Tango Argentino dancer and teacher, a passion inherited from her father Carlo, also nicknamed "Tango" by friends. Internationalization, passion, and warmth are the adjectives that best connect Argentine Tango to our Cabernet Sauvignon.

Annual production: 3,000 bottles.
